Ingredients:
2 large potatoes, cooked with skin
1/2 cup cooked broccoli, chopped
1/2 grated carrot
2 tablespoons cashew cream
Olive oil, salt, and pepper to taste
Preparation:
Cut the potatoes in half and carefully scoop out part of the flesh.
In a bowl, mix the potato flesh with broccoli, carrot, cashew cream, and seasonings.
